Southern Vegan Show Down

Listen I am so so excited to be on day 111 of my Plant Based lifestyle. This has truly been a journey. When I started I looked forward to perusing the grocery store and coming up with creative dishes. Since the grocery store is a mad dash or online due to COVID-19 I have felt limited. However@anthonysbrown_showed up in my kitchen yesterday bring all kinds of down south. He made fried cauliflower, candied yams and cabbage. I just had to retaliate LOL. Anyhoo enjoy this cornbread recipe but to get my Mac and cheese you have to head over to YouTube to get the last 10 minutes. Vegan cornbread Ingredients * 1 1/4 cups all purpose flour

* 1 cup yellow corn meal

* 2/3 cup granulated sugar

* 1 teaspoon salt

* 1 tablespoon baking powder

* 1 1/4 cup unsweetened almond milk

* 1/3 cup canola oil


* Preheat the oven to 400 degrees F and lightly grease a 8 x 8 pan, or a 9 inch round cake

Bake 18-24 minutes.
